Peach & Bourbon Smash Cocktail

This bourbon smash cocktail is a super way to use up peaches that are right on the brink of being overly ripe because the more ripe they are, the more flavour they will impart. Muddling is a way of crushing fruit and herbs together to enhance their flavours. This cocktail uses mint, but it can also be made with fresh basil. For a fun presentation, serve the peach bourbon smash cocktail in mason jars with a mint leaf garnish.


Prep: 5 minutes | Serving: 2 glasses

Ingredients

1 cup very ripe peaches, chopped
8 fresh mint leaves
¼ cup fresh lemon juice
½ cup bourbon
8 ounces ginger beer


 Instructions

  1. Combine peaches, mint and lemon juice in a cocktail shaker or glass jar. Using a muddler or the end of a wooden spoon, smash the ingredients until the peaches break up and juices are released. Add the bourbon; cover the container and shake to combine. Pour into two cocktail glasses filled with ice and top with ginger beer. Stir to combine and serve immediately.
