Cherry Tomato & Ricotta Cheese Pizza
Prep: 15 minutes | Bake: 15 minutes | Serving: 4-6
1½ cups mozzarella cheese
¼ cup freshly grated pecorino cheese
½ cup Ricotta Cheese and Oregano Pizza Spread (recipe below)
1½ cups cherry tomatoes, halved
2 tablespoons coarse cornmeal
- Place Ooni Cast Iron Skillet Pan or a pizza stone in oven and preheat to 500ºF. Place pizza dough on a lightly floured surface. Sprinkle dough with mozzarella cheese, grated pecorino cheese, then add a spoonful of the Ricotta Cheese and Oregano Pizza Spread all around the dough. Dot top with cherry tomato halves.
- Sprinkle a pizza peel with coarse cornmeal. Slide the pizza peel under the raw pizza and quickly place the pizza onto the cast iron pizza pan or pizza stone. Bake for 15 minutes or until golden brown.
Ricotta Cheese and Oregano Pizza Spread
1 teaspoon dried oregano
2 teaspoons fresh garlic, minced
2 teaspoons kosher salt
2 pinches black pepper, ground
- Combine the ricotta, oregano, garlic, salt and pepper in a mixing bowl and whisk together for 1 minute.
