Blueberry Lavender Sour

Spice up your menu with this eggplant curry recipe.
Thai curry paste, ginger and lemongrass make eggplant green curry a vegetarian delight everyone will love.

Ingredients

Cocktail Ingredients:
2 ounces gin
1 egg white
¾ ounce lemon juice
½ ounce blueberry lavender syrup
Dried and fresh lavender flowers, for garnish

Blueberry Lavender Syrup Ingredients:
½ cup blueberries
1 tablespoon fresh or dried culinary lavender
½ cup granulated sugar
½ cup water



 Instructions

  1. To make the blueberry lavender syrup, add all ingredients to a small saucepan over medium heat. Bring to a boil, stirring occasionally until sugar is dissolved. Reduce heat and simmer for 20 minutes. Allow to cool, then strain into a jar.

  2. To make the cocktail, add all ingredients to a cocktail shaker and dry shake (without ice) for 30 seconds. Add ice and shake until the outside of the shaker is chilled. Strain into a cocktail glass. Garnish with lavender.
