Apple Pie Bars


There is something so nostalgic and perfectly seasonal about an apple pie. We’ve taken all those flavours, including the delicious crust and the oozy apples with warm winter spices and turned it into easy apple pie bars. We’ve called for tart granny smith apples but you can use any variety. Serve the apple pie bars as is, or top with a scoop of vanilla ice cream. Either way, be prepared to lose control because these are delicious and addicting!

Ingredients

For the Crust:
1 cup (2 sticks) unsalted butter
1/2 cup sugar
1/4 cup packed light brown sugar
2 1/2 cups all-purpose flour
1/4 teaspoon kosher salt

For the Filling:
2 lbs granny smith apples, peeled and thinly sliced
Juice of 1/2 lemon
2 1/2 tablespoons all-purpose flour
3 tablespoons sugar
1/4 teaspoon ground cinnamon
1/8 teaspoon nutmeg

For the Topping:
1/2 cup rolled oats
1/3 cup packed light brown sugar
1/4 cup all-purpose flour
1/4 teaspoon ground cinnamon
5 tablespoons unsalted butter, cold and cut into small pieces

 Instructions

  1. Preheat the oven to 350°F. Line the bottom of a 9x13-inch baking pan with parchment paper, leaving enough paper to hang over the sides. Spray the bottom and sides with non-stick cooking spray. Set aside.

  2. To make the crust, mix the butter, sugar and brown sugar together until light and fluffy. Add the flour and salt and mix until just combined. Transfer to the prepared baking pan and, using your hands, press the dough into an even layer. Bake until lightly golden, about 20 minutes. Set aside.

  3. To make the filling, toss the apples with the lemon juice in a mixing bowl. Add the flour, sugar, cinnamon and nutmeg and toss to combine. Spread apples over the crust.

  4. To make the topping, stir together the oats, brown sugar, flour and cinnamon. Add the butter and, using two knives or your hands, cut the butter until you have very small pieces. Sprinkle the topping all over the apples. Bake in the middle of the oven until apples are soft and topping is golden brown, about 50 minutes. Allow to cool in the pan for at least 15 minutes. Cut the apple pie bars into squares and serve.
